As a parallel project to the new Infirmary/Mental Health Center on Rikers Island, Gonchor is designing a freestanding, system-wide Cook/Chill Production Kitchen and Storehouse to feed the entire system-wide jail population, over 107,000 inmate and 13,000 employee meals per day.
The production kitchen and storehouse will use advance food preparation technology to provide prepared food in a cook/chill format, the latest method of food and preparation and distribution. Chilled prepared food will be transported in refrigerated vehicles to each of the facilities and held under refrigeration until serving is required. Facility kitchen will then rethermalize bulk food for dining hall serving or pre-portioned trays at the housing units for local distrbution.
